At Mounier Farms LLC, we take great pride in the fact that every crawfish we process is farm-raised right here on our own land. Unlike most peeling plants that rely on outside farmers for their crawfish supply, we oversee the entire process from pond to packaging, ensuring the highest quality and consistency.

At Mounier Farms LLC, we follow a carefully crafted five-step process to ensure the highest quality crawfish:

By overseeing each step, we guarantee the best crawfish possible.

1.The Washing Process

•The first step in our process is to carefully inspect each sack of crawfish by hand before they enter our automated washing system. If any issues are detected, the product is immediately removed to maintain quality.

 

•Our washer continuously flows fresh water over the crawfish as they are gently lifted from the purging tank by a continuous flow belt. During this step, we also manually remove any remaining debris to ensure only the highest quality crawfish make it to the cooker. From the washer the crawfish are taken via conveyor to the cooker.

2.The Cooking Process

•Our cooker is a large 20-foot tank equipped with a corkscrew-style rotating basket that moves the crawfish through the cooking process from start to finish. This efficient system ensures that each crawfish is perfectly cooked in approximately 4½ minutes.

•The crawfish are checked with a probe thermometer several times after exiting the cooking process to ensure they are perfectly cooked.

3. The Chilling Process

•After cooking, the crawfish are transported via conveyor to a tank similar to the cooker. In this tank, we introduce chilled water to rapidly cool the crawfish, ensuring a safe and delicious product once processed.

 

•Cooking the crawfish and then immediately chilling them afterward is the best way to ensure any bacteria is eliminated. This process also helps preserve the flavorful fat in the tail meat, retaining its rich taste and texture.

4.The Peeling Process

•Our crawfish are hand-peeled and meticulously cleaned, with constant visual inspections to ensure that no shell or debris remains in the product before packaging.

 

•Our peeling room is maintained at a cool 58°F to prevent any bacteria from forming on the product during the peeling process.

5.The Packing Process

•At this step, the crawfish are carefully inspected to remove any remaining debris, ensuring the product is completely clean before packaging.

 

•The crawfish are then portioned into one-pound servings before being packaged.

 

•Using a fully automated roll stock vacuum packaging machine, we place the previously weighed one-pound servings into the machine, where they are vacuum-sealed and ready for freezing.

After completing our five-step process, the crawfish are placed on racks and transferred to a blast freezer set at a frigid -10°F to ensure rapid freezing. The following morning, the crawfish are removed, packaged in 25-pound boxes, and stored in our freezer until ready for sale.
